RECIPE: Breakfast Pancakes (low-carb)

INGREDIENTS
• 3 heaped Tbsp psyllium husks
• 1 heaped Tbsp ground chia seeds
• 1 heaped Tbsp soy protein powder
• 1 heaped Tbsp coconut flour
• 2 flat tsp baking powder
• generous pinch of salt
sweetener (I crush up 16 Splenda tablets)
• 4 eggs
• 1 cup milk (maybe a dash more; approx. half a pint)
• generous splash of vanilla essence
butter for frying
• optional: finely grated fresh citrus peel

METHOD
• combine and mix dry ingredients
• combine and whisk wet ingredients
• combine dry and wet ingredients, whisk and rest for 5 min, then again whisk and rest
• fry for 3 min on one side, 2 on the other, on a pre-heated frying pan set to medium

Serve with a knob of butter, or whipped cream, or berries, or your favorite toppings.

Makes 10-12 regular size pancakes.
